Toasted Coconut Cupcakes

I had planned to make Spring Chick Cupcakes but I couldn't get my hands on licorice laces. So while we were watching the afternoon session of conference, I made toasted coconut cupcakes. They were delicious. Don't even bother with the Spring Chick Cupcakes ... save yourself some time and money ...and you will still be in heaven.
Even better than eating the cupcakes, we shared them. We took some to our home and visiting teaching families and to some other friends. It was fun to drop by unexpected, bearing gifts. It is my new goal to do something nice and unexpected for someone each week.

Good call meg. i tried to do the chick thing. to hard, ours are just frosted.
